Happy New Year Everyone,
This morning I was invited to a New Year’s Day dinner, and with very little time and not much in my pantry, I ran over to Rayn or Shine to see what I still had in my garden.
I knew there were still beets, and to my absolute delight I discovered these wonderful and shapely parsnips, buried deep in the soil, a handful of purple topped turnips, and the last of the leeks. I drizzled them all in olive oil, added a few sprigs of rosemary and thyme, sprinkled over a bit of balsamic vinegar and roasted them while I got ready for my party.
I have never grown a winter garden before and am so thrilled to be able to pull this wonderful bounty out of the ground on New Year’s Day.
